Default Does HAAS make higher speed chuck?

Yeah......do they?
The A axis is waaaay too slow.

My old SERVO (C axis) is faster than the new VF5 (A axis).

Yes they do make them in differing speeds. Take a look on their web site you should find them.

I checked them out. They're like over $100,000.00 for high speed chucks.
insane.

I'm not sure what you looked at but this critter does 360°/SEC for $12,895.00.
