Stacking grinding wheels?

I should think so, so long as they have blotters between, but then the surface of the wheel periphery won't be continuous. The biggest danger I see is if the sides of the wheels touch, and are not parallel, tightening the nut will put side pressure on one or the other, causing it to crack and blow up at speed.

You may also look at Type 5 wheels, dished on one or both sides, allows wider wheel on shorter adapter.
Long ago I read some old text on grinding. like 1920 vintage. One idea I have used,but never seen discussed here, is dressing a step into the leading edge of the wheel. This allows a deeper cut to be made with less heat and HP. I would take a 3/4" wheel and put a step of .005, for 1/4" of the face, now a .010 DOC would be easier, than a single .010 DOC.
It could work for you.
 
I have four wheels mounted on a bench grinder/buffer (10" Baldor buffer), two on each side with thin spacers. Though my wheels are all different grit.
