A36 Steel Part Questions

I have a largish (for me) A36 part to machine-- blank is 9x13" and will be either
2.25 or 2.5" thick.

I can get Stress Relieved material (2.25" thick) or non-Stress Relieved (2.5" thick).
The 2.5" thickness will make fixturing this a lot easier. I like the idea of stress
relieved material as this will be a weird shape (looks like a shrimp or question mark of sorts) and
I'm worried about potential distortion. Any recommendations either way as far as
material?

On a related note, what would typical scale thickness be on plate like this?
 
scale is between two and three sheets of printer paper on the 2.5 grade 36/50. sample size of one, on one side.
 
Usually when something gets stress relieved, it then goes into the rotoblast.

The steel shot cleans it up nicely.
