If possible, always bend across the grain, rather than with the grain. The grain is the direction of rolling. Bending with the grain is more likely to crack.
It is customary to use 8 times your material thickness to get your bottom die width (10 time on 5/8" and thicker plate). The bottom die width is then multiplied by .15 to get your inside radius on low carbon steel, .20 on stainless steels, aluminum tends to stick to the radius of the upper die (look up minimum bend radii for alum.).
