I've never seen these, but they could be handy for sure.
What are they called?

Used on Bullards and other large (over 36" or so) dia. Vertical boring mills.

Instead of a chuck, they ran these on a faceplate.
 
These folks appear to have been using them on a 30"+ 4 jaw horizontal lathe chuck.

I have used Mighty Bites on occassion for T slots on my 32" chuck, but these could be interesting too.
But they doo look awfully tall, so IDK...

Big lathes made do with such since "chuck" was permanently attached - since its faceplate internal gear was for the "granny" speeds - the small hand wheel adjacent slipped the pinion in and out of gear as needed

Other Thumbnail big similar vintage Le Blond (OSHA equipped with guarding:D) with its set of jaws
