wall thickness

I am building a keg washer for my brewery and I was trying to determine what thickness of stainless steel to use for the tank build. It will be a square tank that measures 23" W X 16"D X 19" H. Tank will be open top or loose lid but no pressure. Will use 316 or 304 stainless. Thanks for looking

If I were doing this I'd go 16Ga. We built a fluidized bed coater tank of no dissimilar dimensions and it's plenty rigid. You might be able to get away with thinner sheet but it's probably trickier to weld. If you were to fold the edges and spot weld it, you could probably do it with 18Ga pretty well, or even 20 but that would start to get a bit flexy.
