How difficult is 17-4 stainless to work with? Rolling? Shearing?

I have a small job for a food place.
It is magnetic stainless.
It appears to be 17-4 stainless rolled into a ring.
Then, welded to a plate.
The open end is sharpened ( beveled) to a cutting edge.

This material will be 16 gauge, and about 4 inches wide.
The circle diameter is around 6 inches.

Shouldn't be bad at all, but you'll work it annealed, then get it hardened.

As to the sharp edge, rough it prior to hardening, then sharpen for use. A soft cut board will be needed, even full-hard 17-4 isn't "that" hard.

Passivating after all the work is done might be nice to maximize corrosion resistance and cleanliness.
