The issue of epidemic models came up in the "OT: The Evolution of Bacteria on a "Mega-Plate" Petri Dish (Kishony Lab)" thread, and there seem to be many questions about how such models work, what they predict, and most importantly, their limitations. So I looked around, and came up with a nice youtube video lecture:

For those comfortable with systems of ordinary differential equations, the Wiki article on "Compartmental models in epidemiology" is a good survey. (The practical models are solved numerically, as in the video above.)
