Polished mild steel

Why doesn't polished mild steel rust? All of my mild steel stock loves to rust if it isn't protected, but polished parts like the crank handles on my Bridgeport mill which are apparently mild steel (strongly magnetic) show no sign of rust after 40 years.

Either plated, or oil is always being applied from your hand or both, also turning the handles will polish that part of them where you grab.

If they're frequently used they'll never rust. You should see some of my older hand tools - I have a 15" adjustable wrench and the handle looks like it was polished on a buffer where my hand sits when using it. Above and below the spot where my hands normally grip the handle has a satin finish. Same for the exterior door handle on my front door. Working men's hands are a bit abrasive.
