I am going to make a copy of a H&G sprue plate and trying to figure out how the deep sprue holes were made.

Not familiar with H&G but I think Lymans were of a depth that gave about a .125" hole into the cavity. That size seems to be a compromise between easier sprue cutting and time to fill the cavity. I think you will have to do the math based on the angle of your countersink.

Its going to depend on bullet diameter too..........but if the holes are too large ,the sprues are hard to cut if using a hard alloy.You can cut with the metal still soft ,but I find that generally causes a metal smear to build up,which can halt the operation until its removed .

The "Cast Bullets" publication put out a few years back by the NRA, by E.H. Harrison, has tons of information on sprue plates, their use, peculiarities, materials,dimensions,etc. Most likely out of print, but you can find them on ebay and such. A bit pricey these days, but worth getting a copy.

the sprue plate is thicker on H&G's, aprox. .250.
