Motor Controller Wiring help

Ok so I have this treadmill motor and controller from a treadmill I took apart, its a 3hp DC motor. SO my question is looking at this wiring diagram to use the stock controller which wires do I connect a potentiometer too to control the motor speed and also I assume I need to jumper the Emergency stop wire somewhere? To power or ground?

Here is a picture with the description of the connections in the harness.

Here is a close up shot of the harness and the wire descriptions. I need to know how to controll this motor with this stock controller.

1. where do I hook up the potentiometer across what wires

2. do I also need to jumper the E-stop wire? Do I jump that to 5v or ground or what?

thats why I added the second one which is a close up of the actual wire descriptions on that harness
