See Tag information below. This is the Tag from the motor on my Pinacho L1/180 lathe. I am wondering what the best option would be to get this running on single phase 240V. I would like to have it functioning as close to original as possible. Thinking of changing the motor to 240V 3phase and using a VFD to get some options for better speed control. From what I can tell the switching on the lathe should all work since it runs off a 120v transformer. What would some of you recommend? I don't think the option to use a 600v transformer is legal here in Newfoundland Canada.

That motor is good for either the 575V, or 277V if reconnected delta (300V, ideally). Not super useful. If you leave it wye it will work at lower power on 480V.

Not sure why a transformer would not be OK, if associated with that specific machine. It would do what you want if you find the right 240V-575V transformer.
